An incredibly easy and flavorful dish featuring tender chicken thighs, buttery garlic flavor, and perfectly cooked baby potatoes, all in one pot.

Ingredients

  • 4 chicken thighs or breasts (boneless or bone-in, skinless preferred for less fat)
  • 1 lb baby potatoes, halved
  • 1/2 cup unsalted butter
  • 1 head garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Place the halved baby potatoes at the bottom of the slow cooker.
  2. Season the chicken thighs or breasts with salt, pepper, and thyme.
  3. Melt the butter in a small saucepan over medium heat, then add the minced garlic and stir for about 1 minute.
  4. Pour the garlic butter mixture over the chicken and potatoes in the slow cooker.
  5. Cover the slow cooker with the lid and cook on low for 6-8 hours or on high for 4 hours.
  6. Remove the lid and garnish with freshly chopped parsley before serving.

Notes

For firmer potatoes, add them halfway through the cooking time. Feel free to adjust seasonings and add vegetables for variety.
