A beloved Chinese-American dish featuring crispy chicken coated in a sweet and savory hoisin sauce, perfect for weeknight dinners.

Ingredients

  • 3-4 chicken breasts, cut into cubes
  • 3/4 cup flour
  • 3/4 cup cornstarch
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 2 large egg whites
  • 1/2 cup vegetable oil (for frying)
  • 2/3 cup hoisin sauce
  • 1/3 cup rice vinegar
  • 1/3 cup low sodium soy sauce
  • 1/4 cup brown sugar
  • 3 tsp. minced garlic
  • 1 tsp. ground ginger
  • 1/2 tsp. red pepper flakes
  • 2 tsp. cornstarch (for thickening the sauce)

Instructions

  1. Prepare the Sauce: In a medium-sized mixing bowl, whisk together hoisin sauce, rice vinegar, soy sauce, brown sugar, minced garlic, ground ginger, red pepper flakes, and 2 teaspoons of cornstarch. Set aside for later.
  2. Make the Coating: In a large ziplock bag, combine flour, 3/4 cup cornstarch, salt, and black pepper. Seal the bag and shake it to mix the ingredients evenly.
  3. Coat the Chicken: In a medium-sized mixing bowl, add cubed chicken and beaten egg whites. Toss the chicken until all pieces are well coated in egg.
  4. Heat the Oil: In a large skillet, heat 1/2 cup of vegetable oil over medium-high heat until hot but not smoking.
  5. Fry the Chicken: Using a slotted spoon, scoop up the chicken pieces and allow excess egg whites to drip off. Drop the chicken into the ziplock bag filled with the flour mixture. Shake until the chicken is evenly coated.
  6. Cook in Batches: Carefully place the coated chicken pieces into the hot oil in batches. Avoid overcrowding the skillet to ensure even cooking. Fry until golden brown and cooked through, about 4-5 minutes per batch. Use a paper towel-lined sheet pan to drain the fried chicken.
  7. Make the Sauce: Once all the chicken is fried, wipe excess oil from the skillet. Pour the prepared sauce into the skillet and simmer over medium heat until it thickens slightly.
  8. Combine Chicken and Sauce: Add the fried chicken to the skillet and toss it to coat each piece thoroughly with the sauce.
  9. Serve: Serve immediately with white or brown rice, garnished with chopped green onions if desired.

Notes

Maintain oil temperature for crispy chicken. Avoid overcrowding the skillet.
