A delicious and comforting casserole combining tender chicken, zesty flavors, and crunchy Fritos, perfect for busy weeknights.

Ingredients

  • 1 tablespoon butter
  • 1 cup onion, chopped
  • 1/2 cup bell pepper, chopped
  • 15 ounces black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 7 ounces green chiles, drained
  • 3 cups chicken breast, cooked and diced
  • 10.5 ounces cream of chicken soup
  • 10 ounces Rotel tomatoes (or other canned tomatoes with chiles)
  • 4 ounces cream cheese, softened
  • 2 cups grated cheddar cheese
  • 9.25 ounces Fritos
  • 1/4 cup cilantro, chopped

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×11 inch (2-quart) baking dish and set it aside for later use.
  2. In a heavy skillet, melt the butter over medium heat. Add the chopped onion and bell pepper to the skillet. Sauté for about 5 minutes, or until the onion is soft and begins to turn translucent.
  3. Add the black beans, corn, green chiles, and diced chicken to the skillet. Stir well to combine all the ingredients thoroughly.
  4. Pour in the cream of chicken soup, followed by the Rotel tomatoes and softened cream cheese. Stir until the cream cheese is blended smoothly into the mixture.
  5. Gently fold in the chopped cilantro to add a fresh touch to your casserole.
  6. In the greased baking dish, layer 1/3 of the Fritos at the bottom. Add half of the chicken mixture over the Fritos, followed by 1/3 of the cheese. Repeat with another layer of Fritos, the remaining chicken mixture, and 1/3 of the cheese again. Finish with the remaining Fritos on top, followed by the rest of the cheese to create a cheesy crust.
  7. Place the casserole in the preheated oven and bake for 25 to 30 minutes, or until the cheese has melted and the casserole is heated through.
  8. Once baked, remove the casserole from the oven. Sprinkle with additional cilantro for garnish before serving warm.

Notes

Monitor the baking time and prevent the Fritos from getting soggy by adding them just before serving.
