Ingredients
8 to 9 chicken thighs, skins on
2 chicken bouillon cubes
12 cups water
1½ teaspoons salt
¾ teaspoon pepper
½ teaspoon dried thyme
2 cups chicken broth (from the pot)
2 cups milk
6 tablespoons cornstarch
½ teaspoon salt
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
½ teaspoon salt
¼ cup solid shortening
1¼ cups full-fat buttermilk
¼ cup chicken broth
Instructions
Place the chicken thighs in a large deep pot and cover them with water. Add the bouillon cubes, salt, pepper, and thyme, then bring to a boil.
Reduce the heat, cover the pot, and cook for about 1 hour.
Transfer the cooked chicken to a bowl and let it rest covered for at least 15 minutes before shredding.
In a medium saucepan, whisk together chicken broth, milk, cornstarch, and salt over medium heat until thickened.
In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt. Cut in shortening until crumbly, then mix in buttermilk and reserved chicken broth just until combined.
Bring the broth back to a boil. Drop spoonfuls of dumpling mixture into the broth, cover, and simmer for 10 minutes.
Carefully remove the lid, ladle broth over dumplings, and let them cook for an additional minute.
Add shredded chicken and thickened sauce to the dumplings, gently mixing until combined. Serve hot.
